The magic of
grape seeds

It was Hungary’s Nobel-prize winning scientist, Albert Szent-Györgyi who first studied the health benefits of grape seeds. In 1936 he reported that grape seeds might contain the highest concentration of antioxidants in nature.

Our winery has been processing the by-products of winemaking, grape seeds and grape skins since 2010. The whole process takes place in the facilities of the winery using the seeds and skins of grapes farmed organically.
Grape seeds are processed to make oil and microgranules. Pulverization is essential because whole seeds even when chewed do not have the same positive effect. This way the active ingredients come to the fore and can interact on a larger surface and more efficiently with our system. First the oil extracted from the seeds and then the seeds are pulverized.

Attila Gere in cooperation with researchers from the University of Pécs have conducted tests on grape seed and skin granulates and you can read a summary of some of their findings below.

HOW TO USE IT?

Wine is not the only way to utilize grapes, there are alternative modes of processing and exploiting their values. Grape seed oil and microgranules, the juice of green grapes (verjus) are all healthy and are delicious ingredients for cooking at home.

The oil extracted from the seeds of perfectly ripe black grapes is extremely rich in bioactive antioxidants. With its high smoke point it can be used in cooking. However one must be careful about getting the portions right – you should mix 1 part grape seed oil with 2 parts of common cooking oil -, because grape seed oil has a more intense flavour than most other oils.
It’s a great match for any citrus flavoured dish but thanks to the intensity of its flavour one can use it with red meat as well. You can use it to dress salads, or with roasted vegetables, cream soups as seasoning. It can be served as snacks by simply offering it with bread, sea salt and balsamic vinegar.

Grape seed oil and microgranules have favourable health and immune system boosting effects. Due to the patented special microgranule processing technology the absorption of the beneficial bioactive ingredients is extremely effective.
It is a great supplement to a healthy breakfast mixed in yoghurt, kefir, muesli, granola, porridge or smoothie. Adding 3-4 tablespoons to the dough will make your homemade bread not only look excitingly purplish but also increase the complexity of its flavours. It can be used in the same way to make milk-loaves or focaccia, practically any kind of pastry. And if you want something really extra why not cover your chocolate bonbons in grape seed granules instead of cocoa powder.
Black grape seed and skin oil and microgranules are also available in capsules and have the same efficiency as the granules. Capsules provide a more convenient way of ingestion, in terms of immune boosting capacity there is no difference between the two formats

HOMELY BREAD Á LA MANDULA RESTAURANT

Ingredients:
550 g bread flour (BL55)
15 g salt
75 g grape seed microgranules
350 ml hand warm water
100 g sourdough (or 25 g fresh yeast)

Mix the salt and grape seed microgranules in the flour, add the sourdough (or yeast) and the hand warm water. Knead the dough thoroughly until it becomes properly pliant and firm. Cover it and let it rest for an hour in a warm environment, then knead it over again, form it and fold it. Preheat the oven to 200˚C degrees, and in the meantime let the bread rest. Fill an ovenproof dish with water, put in the oven to generate steam, coat the cake tin with flour then place the bread in the cake tin and bake it for 20-25 minutes.
